Momma Teresa's (Webb Whatcott) Recipes
(These are recipes that Mom (Teresa) gave to Brian before he went on his mission. There are also classic recipes of food that she made very frequently growing up, they always bring back memories!)
Salsa
1 can of whole tomatos
1 can chile
1 bunch of green onions
salt to taste
may add season salt and garlic salt
Put in blender till chopped up good. If you don't have a blender, chop up best as you can with a knife and mix all together well!

Mexican Pizza
2 flour totillas- butter each side and cook on pan till golden brown on one side, turn over and add grated cheese, melt. Do same to both tortillas.
Add toppings: sour cream, olives, hamburger, beans, tomato, onion, then second tortilla and more toppings.

Red Enchiladas
1 doz corn tortillas
Browned hamburger (optional) about a lb
grated cheese
enchilada sauce or diluted tomato sauce
Fry tortillas in shortening- just long enough to make tortilla soft. Add hamburger and cheese on the tortilla, roll, place in pan, fill pan with a layer of rolled tortillas, cover  with sauce. Do a second layer if desired. Top with cheese. Bake at 350 till bubbly.

Green Enchiladas
Same as red except sauce- use 1 can cream of chicken or cream of mushroom soup (diluted with milk). Sprinkle cheese on top.

Chicken Fajitas
Corn torillas
Cooked chicken (boil chicken, or chicken legs in water till done)
Salt and peper meat
Warm torillas on skillet, place meat on tortilla, roll, cook both sides of rolled tortilla till golden brown.

Beans
2 cups of beans, cleaned (make sure no rocks or rotton beans are in them)
soak overnight or all day
cook in crockpot or pan overnight or all day after they soak
Add salt, pepper, hamburger to season to taste.
-Can be used on Navajo tacos, eat a bowl of beans, mash and use on tostadas, mash and use on burros, at to taco salad.

Stew
1/4-1/2 lb meat or hamburger
2 potatoes
1 carrot
1 can mixed vegetables (optional)
salt to season, water to cover vegetables
Fast method: brown meat, cook on med high till carrots are soft.
Slow method: put all ingredients in pan with water cook on low till veg are tender

Basic Bread Recipe (can be used for bread, fry bread, pizza dough, cinnamon ball bread (a.k.a. monkey bread), cinnamon rolls, rolls, ect)
1 cup warm water
2 tbs sugar
1/2 tsp salt
1 tbs oil
1tbs yeast
2 and 1/2 cups flour
Mix together, let yeaset bubble before adding flour, if you want wheat bread add wheat flour, or do half white and half wheat flour.
-For fry bread: roll out thin, cut in squares or any size you want and fry in deep oil.
-For cinnamon ball bread (a.k.a. monkey bread): roll dough about 1/2"-3/4" thick. Cut circles with metal pop bottle lid. Dip circles in melted butter. Put one layer of dough down, sprinkle with brown sugar and cinnamon, add second layer, sprinkly with sugar/cinnamon till dough is gone. Bake in oven at 350 for 30-40 min or till golden brown. Top with frosting.

Glaze Recipe for Cinnamon Ball Bread (a.k.a Monkey Bread)
1/2 cup butter melted
1/2 cup milk
2 cups powder sugar
Mix together. Can add flavoring if you have any. Use less milk for a cake type frosting, add more milk (more runny) for cinamon ball bread glaze.

Lasagna
Brown 1lb of hamburger
1 pkg Lasagna noodles
1 carton cottage cheese
grated cheese
2 cans tomato sauce or 1 can spaghetti sauce (diluted with water)
Put sauce in pan, add layer of noodles, add more sauce, sprinkle on hamburger, cottage cheese, and cheese. Continue layers till pan is full. Bake 300-350 for 1 hour.

Potatoes:
Baked Potatoes - with butter, gravey, sour cream, broccoli with cheese sauce
Mashed
Hash Browns - dice or grate potatoes and fry
French Fries - deep fry potato strips
Potatoe Pie - hamburger and vergetable mixed together with mashed potatoes on top with melted cheese.
Scalloped Potatoes - thick potato slices with cheese on top (can add cream soup for variety)
Hobo Dinner (tin foil dinner) - potatoes, carrots, cabbage, hamburger, and any other vegetables will work, wrap in tin foil and either bake in oven or in a fire pit.
Potato Soup - dice potatoes, cook with lots of water (enough for soupy texture) add a can of creamed corn or regular corn.
Deviled Potatoes - Bake potatoes, when done, scoop potato out of skin and put in bowl, add butter, salt, pepper and mash. May add sour cream and diced onions. Scoop back into skin , grate cheese on top. Put back in oven till cheese is melted.

Eggs
Boiled - put # of eggs you want in pan, cover with water, add 1 tbs salt, boil 15 mins.
Fried
Scrambled
Deviled eggs - cut boiled egg in half, take out yolk, put in bowl, mash, add mayo, mustard, relish (optional), salt and pepper to taste. Spoon back into egg white. Sprinkle with paprika. 

Pancakes or Waffles
2 cups water (or milk)
2 eggs
2 tbs sugar
1tsp salt
1 tbs baking powder
2-3 cups flour (enough to make thick, pourable dough)
